Gingerbread has a long history in European cultures dating back to medieval times. In some respects, it’s also global; relying on ginger and other spices from Asia, while using European baking techniques. When sweetened with molasses or sugar, this baked good further relies on an ingredient native to the Asia-Pacific region, but cultivated by Europeans in the Caribbean and Latin America.
