During her multiple tenures at MIT, Sabine taught a range of subjects in the French & Francophone Studies Curriculum. She played a major role in the French-language cultural immersion program, January Scholars in France, leading many of the student trips abroad.

Levet has written articles and chapters about the development of tools for cross-cultural understanding and has given talks and workshops on intercultural communication, the teaching of culture, and the use of technology in language teaching and learning. She collaborated on the interactive documentary Dans un quartier de Paris, published by Yale University Press (1999) and the multimedia fiction A la Rencontre de Philippe (teacher’s guide) published by CLE International (2006). She is also an original developer of Cultura, which received a special recognition from the American Council on Education in 2010. She is also the author of the project Tramway and Vélib: changing urban space in Paris.
