Last August, MIT’s Committee on the Undergraduate Program decided to explore ways to enhance the undergraduate first-year experience at MIT by offering first-year students greater flexibility in exploring new fields.In tandem with this initiative, GSL decided to offer 21G.012 Exploring Globalization through Chinese Food taught by Professor Emma Teng.
Using the cuisine in the local Boston area as a jumping off point to, students will have the chance to explore topics such as global trade, migration, transnational business and labor, the transnational dissemination of knowledge, and cultural production. The class also draws on cookbooks, memoirs, reportage and documentaries; and will include a walking tour of Boston’s Chinatown. A workshop in Chinese cooking concludes the semester!
